For 10 people
Preheat the oven to 120°C.
Pour the four egg whites into a bowl and add about 1/4 of the weight of the sugar.
Beat until stiff and add the remaining sugar and beat for a few moments.
Add the lemon juice and food coloring, mix.
Pipe small piles onto a baking sheet lined with baking paper using a piping bag.
Bake at 100°C for one hour.
Serve.
