In a bowl, mix the flour, salt, and sugar. Then, in a bowl, dissolve the yeast in a little water. Gradually add the remaining water to the flour while kneading.
Add the yeast and continue kneading until you get a soft dough that no longer sticks to your fingers. Cover the bowl with a damp cloth and let the dough rise for one hour at room temperature.
Once the dough has risen, pour it onto a floured work surface and knead it, folding it over several times to degas it. Form 7 to 8 equal-sized balls.
Butter a large baking dish and arrange the cleaned and dried walnut leaves in one or two layers. Place the dough balls on top of the walnut leaves, leaving a little space between them. Let them rise for 30 to 45 minutes at room temperature.
If you like, you can decorate the dough balls with sesame seeds, nigella, or crushed walnuts. Bake them in a preheated oven at 180°C for 40 to 50 minutes. Let them cool slightly and remove the walnut leaves before serving.
