Detach the cabbage flowers and wash them. Cook them in boiling salted water for about 10 minutes. Drain them, put them in a bowl, then crush until only keep small grains of romanesco cabbage.
Add the flour and mix, then the beaten egg in an omelet and mix. Add the milk and the cream then the cheese, salt, pepper, nutmeg, and homogenize. Season.
Heat a little oil in a pan. Form pancakes, then cook for about 5 minutes on each side.
