Mix the olive oil, thyme, espelette pepper and salt.
Wash the sweet potatoes. Cut them in half and crisscross the flesh. Lead them and brush them with flavored olive oil. Place them on a baking sheet covered with parchment paper.
Bake in an oven preheated to 180°C for 40 minutes of rotating heat cooking.
Sulf of fresh thyme at the outlet of the oven and serve.
