Wash and cut the apples into quarters, keeping the core and skin.
Place the apple quarters in a saucepan and add the cinnamon stick.
Cover with water and boil for 20 minutes.
Once the apples are tender, strain their juice through a sieve and let it drain until the next day.
Collect the apple juice obtained the next day. Weigh it and add the same amount of sugar with lemon juice.
Boil everything for 15 minutes.
Meanwhile, place the jam jars and lids in a basin of boiling water for 10 minutes. They should be completely submerged. Dry them.
Once sterilized, fill the jars with the hot jelly and close.
Your jelly is ready, store in a cool place.
