In a saucepan, boil water and add 3 infusion bags or a handful of fresh lime blossom, as well as an apple cut into quarters without peeling or coring.
Remove the apple once it is tender.
Remove the pan from the heat and let it steep for 20 minutes.
Strain everything through a sieve to collect the juice and weigh it. Add the same weight of sugar as the collected juice, as well as lemon juice. Return the pan to the heat for about 20 minutes.
To check if the jelly has set, place a drop on a cold plate. If it sets, it's ready; if not, continue cooking.
Pour the jelly into clean jars, seal them tightly and turn them upside down until completely cooled.
Label the jars and store them in a cool, dry place.
