Sweat chopped onion and garlic in a saucepan with a little oil.
Add tomatoes, vinegar, sugar, salt and spices (paprika, allspice, clove).
Simmer 45–60 minutes over low heat, stirring occasionally.
Blend smooth and return to the pot to thicken if necessary.
Adjust seasoning and transfer to sterilised jars.
