Peel the apples and pears, remove the core and cut them into pieces then add them to a saucepan.
Pour the sugar and water over the apples, then stir in the vanilla pod, cover and cook.
After 10 minutes, reduce the heat and cook for another 20 minutes, then add a little water and stir.
When the compote is completely cooked, remove the vanilla pod and rinse it.
Let the compote cool then serve.
