In a saucepan, shudder the cream, milk, sugar and lemon zest with agar agar. Bring to a boil for 1 minute. Add the lemon juice then remove the pan from the heat.
Add the brocciu then mix.
Pour the preparation into verrines and let cool in the fridge for 5 to 6 a.m.
