Agar-agar is a giant ingredient that is used in many culinary recipes, especially for frost, puddings and cakes. It is obtained from certain red algae which are cultivated mainly in Southeast Asia. When added to a liquid, the agar-agar forms a jelly when cooled. This happens because the agar-agar contains vegetable fibers that are deposited and solidifying by cooling. To use the agar-agar, simply mix it with a hot liquid (like fruit juice or cream) and put it in the refrigerator until it is completely cooled and took a gelatinous consistency. Agar-agar is often used as a substitute for animal gelatin, because it is vegan and without animal products. It is also a source of dietary fiber and does not contain added sugars.
