Preheat the oven to 180°C
Climb 02 egg whites in snow
Gently incorporate brown sugar, icing sugar and almond powder using a maryse
Cover a baking sheet with baking paper and set up with dough rounds
Bake for 10 minutes
For the garnish, cut the pineapple into small dice
Brown them with the vanilla sugar in a hot pan for 5 minutes.
For the foam, pour the coconut milk into a saucepan
Mix with agar-agar
Carry for simmering
After letting cook for a few seconds, remove the pan from the heat
Add the sugar, then mix
Add the egg white into snow and grated coconut
Put each cookie in 1 small pastry circle
Divide the diced pineapple over, then the coconut foam
Place in the refrigerator.
