To make a green paste, chop garlic, ginger, cumin, and caloupilé leaves with coarse salt.
Next, sauté the onion and thyme, then add a tablespoon of masala and brown the tuna. Stir in the turmeric and tomatoes, cover, and simmer, checking regularly.
Once the tomatoes are cooked, add a little water to obtain the desired consistency of the sauce and let it cook for 7 minutes.
Finally, add a tablespoon of massalé and the tamarind dilution, then cook for another 5 minutes.
