Remove the first layer of lemongrass and cut it in half lengthwise. Lightly crush it with the blade of a knife.
Peel the ginger and cut it in half before crushing it to fully release its aromas.
Place the lemongrass and ginger in a teapot, cutting them into pieces if necessary, then pour boiling water over them.
Let it steep until the mixture has cooled completely, then filter it and add honey.
Serve.
