Start by peeling the tangerines and removing the white parts.
Place them in a saucepan, add sugar and two tablespoons of whole milk. Simmer for 5 minutes.
Mix the remaining milk with flour and add it to the mixture. Simmer for another 15 minutes, stirring occasionally.
Off the heat, let the mixture cool, then add the crème fraîche and mix.
Pour the cream into ramekins and leave in the refrigerator.
