In a bowl, pour the sifted flour, sugar and yeast
Cut the butter into pieces and mix it with dry ingredients. Sand your fingertips

With cookie cutters of your choice, cut the pancakes and place them on a baking sheet covered with parchment paper
Brush with egg yolk and make crossbrokes with the back of a fork
Cook for about 15 minutes.
