The different species of chanterelles, all edible, appearing for the most part from June to November, have folds and not blades under their hollow hats at maturity. We distinguish these folds well by passing their finger there that slides there without breaking them. The chanterelles which are also all edible also have folds. Our most beautiful Girolles encounters were in the mountains on the mossy slopes well exposed to light, humid but well irrigated.
