Preheat the oven to 220°C, meanwhile peel the yam and cut it into sticks.
Then wash them well, remove their glue, dry them and place them in a baking dish.
Drizzle with olive oil and sprinkle with salt, Espelette pepper and dried thyme, then mix everything together.
Bake for 40 minutes at 220°C.
Serve.
