For 4 people
Cut the mango in half, then remove the pit and skin and then cut into small wedges.
In a blender, add the mango pieces, lemon juice and 1 tbsp of sugar and blend until the mango is reduced to a puree.
Add a little water, then a little sugar to adjust the taste.
Pass the mango puree through a sieve before pouring it into a glass jar.
Refrigerate before serving.
