In a bowl, beat the egg, sugar, and salt. Then add all the flour and mix.
Add the soft butter and knead the dough by hand, then roll it out with a rolling pin on a floured work surface.
Cut the dough into tartlet shapes.
Bake the tartlets blind in the oven for about 15 minutes at 180°C.
In a saucepan, heat the milk, vanilla and add a pinch of salt.
Meanwhile, work the sugar and egg yolks in a bowl with a spatula until the mixture whitens.
Then add the flour and boiling milk.
Place the mixture over low heat and stir with a wooden spatula until the mixture thickens and let it boil for a few moments.
Cool by regularly whisking the pan placed in a container of cold water.
Then pour the pastry cream onto the bottom of the tartlets.
Wash and hull the strawberries then place them on the cream.
Then make a glaze by mixing two spoonfuls of fruit jelly with a spoonful of water and then make the tartlets shine by brushing this glaze over the fruit.
Serve.
