Take a saucepan and mix the beer with mustard and balsamic vinegar. Add ketchup, honey, and chopped garlic. Heat the mixture over low heat until it becomes syrupy.
Meanwhile, sear the chicken thighs in a casserole dish with a drizzle of oil. Remove the chicken thighs from the casserole dish and pour off any excess fat.
Place the chicken thighs back in the casserole dish and drizzle with the Guinnes sauce and simmer for a few minutes, turning them over.
Serve preferably with rice.
