Start by mixing the flour, yeast, sugar, and salt in a food processor. Add the eggs, fermented milk, and orange blossom water.
Stir in the butter, then cover the dough and leave for 35 minutes.
Fold the dough, cover it with cling film and leave in the refrigerator overnight.
Transfer the dough to a floured surface and divide it into pieces. Cover it with a towel and let it rest for 10 minutes. Shape the pieces into a sausage shape.
Place the dough pieces on baking sheets. Cover them with a towel and let them rest for an hour and a half.
Preheat the oven to 200°C. Spread the dough balls with an egg yolk diluted in a little milk. Sprinkle them with sugar and score their surface. Bake for 15 minutes.
