In a very large bowl, add the ginger, limes, tartaric acid, and sugar. Mix all ingredients together until well combined.
Pour the yeast into the cup of warm water and let it sit for a few minutes until it begins to rise.
Mix the yeast and ginger in a bowl. Slowly add warm water while stirring gently to dissolve the yeast. Cover the bowl and let the mixture sit at room temperature for 2 days.
Proceed with filtration and bottle.
Refrigerate for 1 week before serving.
