Cut the panga fillets into pieces of 4 or 5.
Place them in a skillet or sauté pan with water and flavored Guérande salt. Simmer for about 10 minutes, turning the pieces over halfway through cooking.
Remove the fish and reserve the cooking water. Add the crème fraîche and curry powder, then heat the mixture for 5 minutes before adding the fish.
Add pepper and cook for 15 minutes.
