To prepare the tart base, crumble the biscuit, add melted butter and mix.
Pour the mixture into a pie dish and line it. Bake at 180°C for 10 minutes.
To prepare the strawberry mousse, start by soaking the gelatin leaves in cold water.
Chop the strawberries and mix them with the sugar and lemon juice. Cook this mixture for 5 minutes.
Set aside a little of this mixture for decoration. Add the gelatin leaves to the rest.
Whip the liquid cream until stiff peaks form. Refrigerate.
Add the strawberry coulis and mix.
Pour this mixture onto the biscuit base.
Place the dessert in the refrigerator and let it chill for at least 4 hours.
For decoration, pour a little strawberry coulis, add chopped strawberries.
