Heat the butter, add the flour and let it melt for 3 minutes.
Then pour in the milk and let it cook for 10 minutes. Add the grated Gruyère cheese and mix.
Off the heat, add the lemon juice, egg yolk and shrimp.
Season with salt and pepper and mix.
Spread the mixture on an oiled baking sheet to a thickness of 2 cm. Leave in the refrigerator overnight.
Cut the mixture and form into balls.
Coat them in flour, then beaten egg white, then breadcrumbs. Repeat this process.
Fry them for 6 minutes and serve hot.
