Place the egg yolks, cayenne pepper, mustard, salt, and vinegar in a bowl. Then add the oil, whisking vigorously to thicken the mayonnaise. Then add the ketchup and cognac. Mix well.
Cut the avocados in half and dice the flesh. Sprinkle lemon over the avocados. Gently mix the avocado cubes, shrimp, and some of the sauce.
Place a lettuce leaf inside the avocado skins and top them with the avocado-shrimp-sauce mixture.
Decorate with the remaining shrimp and add the remaining sauce on top.
Place the avocados in the refrigerator for 30 minutes then serve immediately.
