Split the vanilla pod in half, then scrape it
In a saucepan, add the cream, milk and vanilla, then bring to a boil
Mix the egg yolks and sugar using a whisk
After pouring the milk/cream preparation on the bleached egg yolks, mix
Once the mixture is poured into the pan, cook at 90°C continuing to mix
Remove the pan from the heat while continuing to mix gently
Pour the cream into a dish or bowl, then film on contact
Place the preparation in the refrigerator for 24 hours.
