For 6 people
Wash the lemons then split each lemon into 4 lengthwise but do not separate the pieces.
Salt the inside of the lemons, then close them.
Place and squeeze the lemons in a glass jar against each other and close.
Let stand for 3 days.
If the lemons are not covered, boil 200 ml of water in a saucepan, then let it cool and add 10 g of salt.
Serve.
