Preheat the oven to 180°C. Detail the cauliflower in bouquets. Peel and finely slice the onions.
In a bowl, mix the cauliflower, olive oil, curry and onions. Leave to marinate for about fifteen minutes.
Pour the hard cauliflower A baking sheet covered with parchment paper. Salt and pepper the cauliflower. Bake for about 30 minutes. Watch for cooking. Serve the roasted cauliflower with hot curry.
