Squeeze the juice of 2 lemons then cut the zest of the lime.
Whisk 3 egg yolks in 100g of sugar. Add the mascarpone to the mixture. Mix, then add the lemon juice and a little zest.
Beat 3 egg whites until stiff, then add them to the mascarpone mixture.
Put everything in ramekins and leave in the refrigerator for 3 hours.
Serve with a sprinkle of lime zest.
