Peel the ginger, cut it into large pieces and put it in the blender.
Place the ginger pieces in a blender and add a little water. Blend until you get a paste.
Put the water in a container, add the ginger paste and mix. Add the diced lemon and let it marinate for 30 minutes.
Filter the juice, add the vanilla sugar then pour in the sugar little by little.
Add the mint leaves to the ginger juice and let it sit in a cool place.
Mix before serving.
