Peel the potatoes and cut them into large pieces.
Cook them in a saucepan, covering them with water. Add the stock cube and a pinch of salt.
Once cooked through, drain the potatoes, leaving enough cooking water to suit the desired smoothness of the mash.
Mash the potatoes in the cooking water. Season with salt, pepper, and nutmeg, then add the egg yolk and mix everything together.
Serve the mash hot.
