Peel the garlic and place it in a blender with the salt, pepper, shrimp, and caster sugar. Blend until you get a smooth paste.
Add the tapioca flour to the mixture. Blend everything together, adding a little water.
Knead the resulting dough for 5 minutes.
Once it has become compact, roll the dough into a sausage shape and then wrap it in cling film.
Steam for about 1 hour then remove the film and let cool.
Using a sharp knife, cut the black pudding into thin strips to make chips, then dry them in a low-temperature oven.
Once your chips are nice and crispy, they're ready to eat. Store them in an airtight container.
