Preheat the oven to 200°
Peel and finely chop the onions, then cook them in olive oil for a few minutes until softened. Let them cool slightly.
Place the onion fondue in the center of the pastry squares, followed by the grapes. Place a quarter of Curé Nantais on each square, then close them by folding the corners and securing them with a sprig of rosemary.
Brush the top with a mixture of egg yolk and milk, then bake for 15 minutes.
Serve immediately with arugula or green salad.
