In a buttered pan, melt the onion for 3 minutes then add the bouquet garni, the stock, the milk, the cream, and just half of the parmesan.
Let simmer for 10 minutes.
Add the remaining parmesan and let it sit for 3 minutes, then mix everything together. Add pepper. Then whip the cream into whipped cream.
Add the shallot and chives, then sprinkle with paprika and chili pepper. Season with salt and mix.
Serve with bacon, croutons and whipped cream.
