Take some patidou squash and scoop out the tops and seeds. Cook them in boiling water for about 20 minutes, then drain them.
Dice the bacon into small cubes and place a tablespoon of crème fraîche inside each squash. Add a tablespoon of smoked bacon and a chicken egg, then top with a second tablespoon of crème fraîche. Season with salt, pepper, and a pinch of grated Parmesan cheese.
Bake in the oven at 180°C for 15 minutes (time may vary according to preference).
