Boil the octopus for 20 minutes in a flavored broth.
In a pan, fry small diced tomatoes, sliced peppers and chopped garlic in olive oil for 10 minutes.
Then add the small pieces of octopus, the parsley leaves and the saffron, season with salt and pepper, then cook over medium heat for 10 minutes.
Serve with pasta.
