Boil water and cook the quail eggs for 4 minutes. Then remove their shells.
Coat the eggs in flour before dipping them in a mixture of eggs, milk, nutmeg (if desired), salt and pepper.
Coat the eggs in breadcrumbs and then repeat the process by dipping them again in the egg and milk mixture.
Dip the eggs in the breadcrumbs a second time and fry them in hot oil in small batches.
You can serve them as an appetizer or as a starter with a salad.
