Start by rinsing the periwinkles several times.
Place them in a saucepan with bay leaf, thyme, and about ten peppercorns. Cover them with cold water and add coarse salt.
Boil everything over low heat for about 8 minutes. Once the water boils, remove the pan from the heat, cover it, and let the periwinkles cool in the cooking water.
Drain the periwinkles and serve them warm or cold.
