Take 1 kilogram of reinette apples, peel them and cut them into slices.
Arrange them on a pastry of your choice (shortcrust, shortbread or puff pastry) and sprinkle with vanilla sugar.
Bake in a hot oven at 180°C for 15 minutes.
Pour a mixture of 2 beaten eggs, 125g of sugar, 1 tablespoon of starch and crème fraîche over the apples.
Return to the oven until the pie is golden brown and sprinkle with cinnamon when it comes out of the oven.
