Choose very young, white, firm coprinus mushrooms and remove the stems.
Prepare a stuffing by mixing butter, breadcrumbs, garlic and chopped parsley, then fill the mushroom caps with this stuffing.
Then wrap the mushrooms in slices of smoked ham and aluminum foil to form papillotes.
Place them in a dish and bake in the oven at 150° for 30 minutes.
