Preheat the oven to 190°C. Make a light caramel with sugar and butter in an ovenproof pan.
Arrange halved apricots cut-side up; sprinkle a pinch of culinary lavender.
Cover with pastry, tuck in the edges and pierce.
Bake 30 minutes; rest 5 minutes, then invert carefully onto a plate.
