For 10 people
Rinse blackberries, combine with a little water and heat gently; crush to release juice.
Strain through a fine sieve or cheesecloth without pressing to obtain clear juice.
Weigh the juice and add an equal weight of sugar plus lemon juice.
Boil briskly 20–30 minutes to 104–105°C, skimming foam.
Jar hot into sterilised jars, seal and cool.
