To prepare the chestnuts, make a pot of water beforehand.
Using a knife, incise the chestnuts and spend them a few minutes in boiling water to remove the first envelope.
Then put the fruits to cook in the pot of boiling water for about thirty minutes to remove the second skin.
Drain the chestnuts and reduce them in puree thanks to a potatoes or a fork. The puree thus obtained will then be placed in a pot or in the jam basin.
In another saucepan, make a water and sugar syrup. Once the mixture is mixed, incorporate the split vanilla pod and the rum.
Mix the syrup with chestnut puree and cook for ten minutes to obtain the consistency of the jam. During cooking, systematically stir the preparation with a spatula.
Fill the jars with previously washed and dried jam with a ladle.
Once filled and closed, overturn the jars for a minute and let cool.
