In a bowl, mix the apples previously peeled and cut into quarters, sugar and lemons juice in a hurry.
Cover the bowl with film paper and let stand for 4 hours.
Pour the whole into a deep pot and add the vanilla essence as well as the cinnamon powder.
Put the preparation on the fire and simmer for 20 minutes while skimming regularly. Remove the fire jam and homogenize it by passing it to the plunging blender.
Brown the jam at the heat for 5 minutes until you get a syrupy consistency. To find out if the jam is ready, pour a few drops on a plate in the freezer and tilt the plate. If the jam flows quickly, continue cooking until it becomes viscous.
Once the right consistency is obtained, pour the jam into the pots and overturn them for 1 minute then let cool before keeping them cool.
