Peel and hollow out the apples, then cut them into small pieces.
During the cutting of the apples, place the pieces in a saucepan and water them with the lemon juice.
Split the vanilla pod in half lengthwise and scrape inside to collect the grains and put them in the pan.
Sprinkle with cinnamon (dose depending on whether you want a pronounced taste or not), pour the water and cook over low heat for 20 minutes.
