Preheat the oven to 210°C.
Put inside the Golden Guinea fowl, the strand of thyme and the bay leaf.
Put 1 tablespoon of coarse salt and add pepper.
Add a glass of water and bake the guinea fowl for minutes. Wet it from time to time with its juice.
Take out the guinea fowl and turn it over on the other thigh and let it cook for 15 minutes. Wet it with its juice.
Take out the guinea fowl. Put it on your back and let it grill for 20 minutes. Wet it with its juice.
Serve.
