Soak the mogettes in unical water the day before.
Bring the water to a boil and add the mogettes. Cook for an hour with the bay leaf, thyme and garlic.
At the end of cooking, season with salt and pepper, then add a few hazelnuts of semi-salted butter. Reserve warm during cooking the ham.
Make the ham quickly grill. Serve immediately.
