Cut the chicken by about 2 kg.
In a large skillet, heat the oil and the butter, then add the chicken pieces.
When the chicken pieces are golden, add two crushed garlic cloves and the minced shallots, salt, pepper. Using a knife enjoy cooking.
Repeat step 3 until all of the chicken pieces exhaust.
Add the parsley, stir well and serve with the cooking juices.
