Arrange the meats in a pot. Cover with 5 liters of water and bring to a boil.
Remove the foam that forms as you go then add the garni bouquet, garlic and onion with cloves and simmer for 2 hours.
Salt and pepper then cook for 30 minutes.
Prepare the vegetables except the potatoes and add them to the pots and cook for 1 hour.
Boil the potatoes for 25 minutes.
Serve everything with pickles.
